Salmon with Mango Chimicurri

We eat fish at least twice a week in my house because I'm obsessed with any sort of seafood. I have to say that salmon is by far one of my most favorite fishes to eat because of the flavor of the fish alone. Sometimes, all you need is a little salt and pepper and an oven, and you could end up with something super delicious..not to mention, super healthy! Anyhow, I found fresh atlantic salmon at the market on sale and decided that I was going to make it a little differently . You could buy the farm-raised salmon, but I've found it is never as good as the fresh caught fish.


Anyway, I could go on about how much I like salmon forever... Anywhooooooooo, so, mangoes happen to be in season. They smell amazing even before you cut into them or take a bite. Juicy, delicious mangoes. Always makes me think about when I used to live in India and had fresh mangoes at my fingertips... I digress. This meal is on the table within 30 minutes from start to finish and is a great weeknight healthy meal!


Ingredients
2 salmon portions, 3 oz. each
1 mango
1 cilantro bunch
A few basil leaves
2 garlic cloves
2 wedges of lime
1/4 cup olive oil
1 tsp of curry powder, divided
1/2 tsp Red chili pepper
salt and pepper to taste

Directions:
Let's start with marinating the salmon. Also set the oven to preheat at 400 degrees. 


Drizzle it with olive oil, add the salt and pepper, and make sure to add 1/2 tsp of curry powder to each portion of salmon. 


I generally find curry powder to have strong flavor and can jazz up any dish with a dash of it! Find it, use it! It rocks...

Now, back to the salmon. Finish marinating it and set it aside while the oven is preheating. 


While this hangs out, let's start working on the mango chimichurri. Dice up your juicy mango!


Moving on, chop up the garlic. 

Last but not least, chop up the cilantro and the basil. 


Get all of this in a bowl. Slice up the lime to get the lime juice in there. Also, if you're oven is preheated, stick the salmon in for about 12 minutes. 


Once you've added the lime, add the chili pepper, oil, and the salt and pepper to taste. Get that mixed all together!


Stick this in the fridge if the salmon isn't done, but if the salmon is ready to go, get it all plated!! I served this up with some corn on the cob! YUM!


I put a lemon wedge on the plate to drizzle on the salmon as well, just in case!
