Oven Baked Chicken Fajitas



Need something quick to whip up? FAJITAS!! I love fajitas but never want to sit around and take all the time to make them. I found a recipe on All Recipes that looked super simple! This is by far one of the easiest dishes to make in a hurry! Tastes amazing and not too bad for you either!!

Ingredients:
* 1 lb of boneless, skinless chicken breast cut into strips
* 2 tbsp of olive oil
* 2 tsp of red chili powder
* 2 tsp of cumin powder
* 2 tsp of coriander powder
* 2 cloves of garlic minced up
* 1/2 tsp dried oregano
* 1/4 tsp salt
* 1 can (15 oz) of can diced tomatoes with green chilies; undrained ( I got the tex mex style fire roasted..they tasted awesome!)
* 1 medium red onion, sliced
* 2 small bell peppers ( I used one red and one green)
* tortillas (I used corn because my family loves corn tortillas)
* Toppings - if desired (lettuce, sour cream, guac, etc)



Directions:
Preheat oven to 400 degrees. Place the chicken strips in an already greased 13x9 baking dish.


Drizzle the olive oil to coat the chicken and make sure it's fully coated. Next, season the chicken with the garlic and all the dried spices ( from chili powder to salt). 


Now add the can of tomatoes along with the pepper and onions and then stir to combine!



Already looks delish without even cooking!! Now stick it in the oven for about 25-30 minutes or until the chicken is cooked through and the vegetables are tender! Serve with the tortillas and the desired toppings!

Roasted Broccoli and Shrimp

Last week, I was not in the mood to cook at all and I had stumbled upon a really great recipe on here that I figured I'd try. By far the easiest, quickest, thing to make which is obviously healthy and absolutely delicious!

Ingredients:
1 lb of peeled, deveined shrimp (you can marinate before hand if you want but not necessary)
Few heads of broccoli cut up into florets (I like to keep the stem..makes it really good!)
1 tsp Whole Coriander seeds
1 tsp Cumin seeds
Lemon and lemon zest
Red Chili Power (optional and add to your liking of heat)
1 tsp Garlic Power
Pinch of Salt
Pinch of Pepper
3 Tbsp Olive Oil

Directions:
Preheat oven to 425 degrees. Place the florets on a foil covered cookie sheet and coat with 2 Tbs olive oil, salt, pepper, garlic power, red chili powder, coriander seeds, and cumin seeds. Once fully tossed with these ingredients, stick it in the oven for 10 minutes.


While broccoli cooks in the oven for these 10 minutes, toss the shrimp with the remaining olive oil, 1 tsp of lemon zest, and the juice of half of a lemon. After the 10 minutes are up, add the shrimp onto the same cookie sheet as the broccoli and toss carefully all together. 



Roast this mixture for another 10 minutes and voila!! Dinner is ready!! You can choose to serve this over rice or some soba noodles if you choose, but it tasted pretty good on its own to me!! 


This is fool proof and comes out perfect every time!! Enjoy!!
