Chipotle Lime Corn

Looking for a quick fast dish? Do you love corn? Did you answer yes to both of those questions? THIS IS IT. Make this fast, simple side dish to vamp up any meal!



Ingredients:
2 tsp of olive oil
3 scallions
1 small can of chipotles in adobo sauce
2 corn on the cobs
1 lime
Salt and pepper to taste

Directions:

Take the husks off and clean the corn on the cob. 


Shave the corn of the cob.



Wash off the scallions because more than likely, they have dirt on them...ew. And then, slice them thinly.


Take one of the chilies out of the adobo sauce and chop it up coarsely. These smell smoky and spicy..it is awesome flavor and color!


After you've prepped and chopped everything, heat the olive oil in a non-stick skillet over medium heat. Throw in the scallions and cook until softened.


After these have softened a bit and become fragrant, drop in the chilies and the corn. Add in salt and pepper to taste. Saute until you heat everything through and that's it!


VOILA! Tasty & flavorful dish in about 10 minutes! 


Note: This is relatively simple to scale. Depending on how many people there are, add that many cobs and you should be set!
