Lamb Kebabs with Mint Yogurt Dip

MMMMMMMMMMMMM lamb! One of my absolute favorite red meats that is always entirely too expensive at restaurants to eat..so I decided to recreate some lamb kebabs at home! Delish and super easy!



Ingredients:
3/4 - 1lb of lamb (you can buy whatever the grocery store has to chop up into cubes)
1 1/2 cups of fat free plain yogurt 
Mint, divided
Olive Oil
Salt to taste, divided
2 tsp Pepper, divided
2 tsp Cumin, divided
2 tsp Red Chili pepper, divided (to make it more spicy, feel free to add more)
Cucumber (optional)
Red Onion (optional)

Directions:
Take your lamb and dice it into cubes so that it can be put on skewers 


After you've got them in a bowl, drizzle them with oil. Season them with salt and pepper to taste. Add in the cumin & chili pepper. Next, you want to chop up the mint. 


Add half of the mint to the seasoned lamb. 


Cover that with saran wrap and stick it in the refrigerator. Obviously the longer you marinate, the better it will turn out. I marinated the lamb mixture for about 4 hours and it was delicious...however, I do wish I would've done it overnight! I can only imagine the flavors! Anyhow, while that is marinating, you can get started on your yogurt mixture. 


Add the rest of the mint, cumin, red chili pepper, salt, and pepper to the bowl.


Stir all the ingredients together to create a smooth consistency. 


You can let this hang out in the fridge until eating time. Once the lamb is done marinating, bring it out of the fridge to get the chill off & get it threaded on the skewers. While you're doing this, make sure the outside grill is getting pre-heated. 


Head outside to the grill!


Get those bad boys on the hot grill, and let them cook through.


While these cook through, you can slice a cucumber and a red onion as these go great with each and every bite of lamb! Again, this is optional but I highly recommend it!


TIP: I had some left-over cucumber after dinner which I ate only with the yogurt dip! So delicious!



Anyhow, once the lamb is cooked through, get them on the table with the onions, cucumber, and the yogurt dip that's chillin' in your fridge!


You can serve these with pita bread as well but they were so good with just the dip and veggies!
